Yiouvarlakia Avgolemono is one of those dishes.
This comforting recipe features tender meatballs simmered in a rich, lemony egg sauce. It’s simple, nourishing, and perfect for sharing which makes it a beautiful addition to your Easter table or any family gathering.
Ingredients
- 2.2 lbs ground beef (ground round)
- 1/2 cup rice
- 1 medium onion, finely chopped
- 3 tablespoons olive oil
- 1 tablespoon fresh parsley, finely chopped
- 2 eggs
- juice of 2 lemons (about 1/4–1/3 cup)
- 2 tablespoons cornstarch
- salt and pepper to taste
- water (for cooking)
Instructions
In a large bowl, combine the ground beef, onion, rice, olive oil, parsley, salt, and pepper. Mix thoroughly until everything is well incorporated.
Shape the mixture into small round meatballs (yiouvarlakia) and place them on a plate.
In a large pot, bring water to a boil and add salt. Carefully add the meatballs, reduce to a gentle boil, and cook for about 45–60 minutes, until the meatballs are cooked through and the rice is tender.
Preparing the Avgolemono Sauce
In a separate bowl, beat the eggs well. Slowly add the lemon juice, whisking continuously.
Gradually add a ladle of warm broth from the pot into the egg mixture, whisking as you go to gently temper the eggs. Repeat this step once or twice.
Slowly pour the egg-lemon mixture back into the pot, stirring gently.
In a small bowl, dissolve the cornstarch in a little cold water. Add it to the pot and stir lightly.
Allow the soup to warm gently until the sauce thickens slightly. Avoid boiling after adding the egg mixture.
Serve warm.
